Crock Pot Sweet and Sour Chicken

This Crock Pot Sweet and Sour Chicken is a healthier, homemade take on the takeout classic. Simply toss together chicken, pineapple, and a sweet and sour sauce, then let your slow cooker do the work. Your family will love this easy weeknight dinner.

Ingredients
  

  • lbs boneless, skinless chicken breasts (boneless, skinless chicken thighs can be substituted. Cut chicken into 1" chunks.)
  • ¼ cup corn starch
  • 1 cup pineapple chunks (Do not drain. The juice will be used in sauce.)
  • 1 medium red bell pepper (cut into 1" pieces)
  • 1 medium green bell pepper (cut into 1" pieces)
  • 1 cup yellow onion (cut into 1" pieces)
  • ½ cup brown sugar
  • ½ cup apple cider vinegar
  • cup ketchup
  • 1 tsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 3 cloves garlic minced

Instructions
 

  • Cut chicken into 1" chunks and add to a 1 gallon freezer bag. Add cornstarch and close bag. Shake until completely coated.
  • Add chicken, green pepper, red pepper, and onion to the slow cooker.
  • In a medium bowl add juice from pineapple chunks, brown sugar, apple cider vinegar, ketchup, Worcestershire sauce, soy sauce, and garlic. Stir together and pour over chicken and vegetables.
  • Cover and cook on high for 1½ hours (or low for 3½ to 4½ hours). Cook until the chicken reaches an internal temperature of 165° F. 30 minutes before the cooking time is complete, add in the pineapple chunks and recover, and finish cooking.
  • Serve over rice and garnish with fresh green onions and sesame seeds. Enjoy!

Notes

  • Cut chicken into bite-sized pieces for even cooking.
  • Optionally, brown chicken in olive oil before slow cooking for richer flavor.
  • Adjust sauce sweetness with brown sugar or pineapple juice and sourness with apple cider vinegar or lemon juice.
  • Add red pepper flakes or chili sauce for extra spice.
  • Works great with fresh or canned pineapple chunks.
