Slow Cooker Honey Garlic Pork Tenderloin

Ingredients
  

  • 2-2½ lbs pork tenderloin (fat trimmed)
  • cup honey
  • ½ cup ketchup
  • 2 tsp rice wine vinegar
  • ¼ cup low-sodium soy sauce
  • 4 tsp garlic (minced)
  • ½ cup yellow onion (finely diced)
  • 3 green onions (diced)

Instructions
 

  • If your pork tenderloin exceeds the length of your slow cooker, cut it in half horizontally and add to the bottom of a 6-quart slow cooker.
  • Add honey, ketchup, rice wine vinegar, soy sauce, garlic, and onion in a medium bowl. Mix until well combined and pour over the top of the pork tenderloin.
  • Cook on high for 2- 2 ½ hours or low for 4 hours until the pork tenderloin reaches 145°F.
  • Transfer the tenderloin from the slow cooker to a cutting board and allow it to rest for 5 minutes before you start slicing.
  • Slice and serve with sauce over the top. Enjoy!

Notes

  • To cook this in the oven, place the pork in a baking dish, cover it with the sauce, then use foil to cover the dish. Bake at 350°F for about 25-30 minutes. Uncover it and bake for an extra 10-15 minutes until the pork reaches 160°F inside.
  • Let the pork sit for a couple of minutes once taken out of the slow cooker; this will aid in redistributing the juices and maintaining the meat's juiciness.
