Slow Cooker Garlic Parmesan Chicken

This Slow Cooker Garlic Parmesan Chicken is the perfect weeknight dinner! Chicken thighs are seasoned with a flavorful blend of spices, then covered in salty Parmesan cheese and zesty garlic. Slow cook with potatoes and serve with your favorite vegetable side dishes!

Ingredients
  

Chicken

Potatoes

  • 1 lb baby red potatoes (quartered)
  • 2 tbsp olive oil
  • 4 tsp garlic (minced)
  • ½ tsp dried thyme
  • ½ tsp salt
  • 1 tsp pepper

Toppings

  • 3 tbsp butter (divided into 4 equal parts)
  • 1 cup parmesan cheese
  • ¼ cup fresh chopped parsley

Instructions
 

  • Melt butter in a large skillet over medium-high heat. Season chicken with salt, black pepper, paprika, and Italian seasonings. Add to the skillet and brown for 3 minutes on each side. Set Aside
  • Add potatoes to the slow cooker. Pour olive oil over them and add garlic, thyme, salt, and pepper. Mix until combined, then place butter squares on top.
  • Place browned chicken thighs on potatoes skin side up.
  • Cover and cook for 3-4 hours on high or 7-8 hours on low.
  • Garnish with parmesan cheese and fresh parsley before serving.
