This Slow Cooker Garlic Parmesan Chicken is the perfect weeknight dinner! Chicken thighs are seasoned with a flavorful blend of spices, then covered in salty Parmesan cheese and zesty garlic. Slow cook with potatoes and serve with your favorite vegetable side dishes!
Melt butter in a large skillet over medium-high heat. Season chicken with salt, black pepper, paprika, and Italian seasonings. Add to the skillet and brown for 3 minutes on each side. Set Aside
Add potatoes to the slow cooker. Pour olive oil over them and add garlic, thyme, salt, and pepper. Mix until combined, then place butter squares on top.
Place browned chicken thighs on potatoes skin side up.
Cover and cook for 3-4 hours on high or 7-8 hours on low.
Garnish with parmesan cheese and fresh parsley before serving.
