Ingredients
  

  • 1 lb ground beef
  • 2 lbs petite red potatoes (quartered)
  • 2 tbsp butter (divided)
  • 4 cups chicken broth
  • ¾ cup yellow onion (diced)
  • ¾ cup carrots (shredded)
  • ¾ cup celery (diced)
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp cornstarch
  • cups milk
  • 3 cups sharp cheddar cheese (Shredded)
  • cup sour cream

Instructions
 

  • In a large skillet over medium heat, brown hamburger, and drain. Then, add to a 6-quart Crock Pot.
  • Add potatoes, butter, chicken broth, onion, carrots, celery, Italian seasoning, salt, and black pepper. Stir until well combined.
  • Cover and cook on low for 7½ hours or high for 3½ hours.
  • In a small bowl, add milk and cornstarch. Whisk until well combined and pour into crock pot.
  • Add cheese and sour cream. Mix until well combined. Cover and continue to cook for 30 minutes.
  • Stir before serving, and enjoy!
