1 pounds ground beef
2 pounds petite red potatoes (quartered)
2 tablespoons butter (divided)
4 cups chicken broth
¾ cup yellow onion (diced)
¾ cup carrots (shredded)
¾ cup celery (diced)
2 teaspoons Italian seasoning
½ teaspoon salt
1 teaspoon black pepper
2 tablespoons cornstarch
1½ cups milk
3 cups sharp cheddar cheese (Shredded)
⅓ cup sour cream

Instructions

In a large skillet over medium heat, brown hamburger, and drain. Then, add to a 6-quart Crock Pot.
Add potatoes, butter, chicken broth, onion, carrots, celery, Italian seasoning, salt, and black pepper. Stir until well combined.
Cover and cook on low for 7½ hours or high for 3½ hours.
In a small bowl, add milk and cornstarch. Whisk until well combined and pour into crock pot.
Add cheese and sour cream. Mix until well combined. Cover and continue to cook for 30 minutes.
Stir before serving, and enjoy!

Notes

Brown the ground beef and drain it well to avoid a greasy soup.
Quarter the potatoes evenly so they cook through without falling apart.
Add the cornstarch and milk slurry at the end to thicken the soup smoothly.
Stir in the cheese and sour cream slowly on low heat to prevent graininess.
