Slow Cooker Beef Ramen Noodles

Ingredients
  

  • 1 lb ground beef
  • 1 cup carrots (shredded)
  • 1 large red bell pepper (sliced)
  • 3 green onions (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp ginger (fresh grated)
  • 1 tsp black pepper
  • ½ cup brown sugar
  • 1 tbsp sesame seed oil
  • ½ cup low sodium soy sauce
  • 2 cups low sodium chicken stock
  • 2 packs ramen noodles (discard the flavor packet)
  • 2 cups frozen broccoli florets
  • sesame seeds (for garnish)
  • green onions (chopped for garnish)

Instructions
 

  • In a large skillet over medium-high heat. Brown ground beef until completely browned. Drain off excess grease.
  • Add ground beef, bell peppers, and green onions to the bottom of a 6-quart slow cooker.
  • Add garlic, ginger, black pepper, brown sugar, sesame seed oil, soy sauce, and chicken stock in a medium bowl. Whisk until well combined.
  • Pour sauce over the top of the ground beef and veggies.
  • Cover and cook on high for 2½-3½ hours or low for 5-6 hours.
  • Forty-five minutes before cook time is up. Add broccoli and ramen to the slow cooker. Cover and continue to cook.
  • Before serving, stir until well combined. Top with sesame seeds, green onions, and boiled eggs.
