Add marinara sauce to the bottom of a 6-quart crock pot.
Pound the chicken breast with a meat tenderizer or rolling pin. Set aside.
Add parmesan cheese, panko bread crumbs, salt, pepper, paprika, and onion powder in a shallow bowl. Whisk until well combined.
In another shallow bowl, add milk and eggs. Whisk until well combined.
Heat olive oil in a large skillet over medium-high heat. One at a time, add chicken breast to the milk mixture. Then coat each side in the breadcrumb mixture.
Add breaded chicken to the hot skillet and cook each side for 2 minutes or until browned. Do not cook the chicken all the way through.
Place the browned chicken in the crock pot. Cover and cook on high for 2-3 hours or low for 5-6 hours. Top the chicken with mozzarella cheese for fifteen minutes before cook time is done.
