Add chicken thighs to the bottom of a 6-quart slow cooker.
Add honey, sesame seed oil, ketchup, soy sauce, garlic, black pepper, paprika, Italian seasoning, and sesame seeds in a medium bowl. Whisk until well combined. Then pour over the chicken.
Cover and cook on high for 3-4 hours or 5-6 hours on low.
In a small bowl, whisk cornstarch and water together. Pour into the crock pot and continue to cook for 10 minutes or until the sauce thickens.
