Take the stress out of one of your favorite comfort meals with this crock pot meatloaf recipe. It has all of the flavor of the classic meal but doesn’t require an oven or any hands-on cooking.
Add ground beef, Ritz crackers, eggs, ketchup, mustard, milk, Worcestershire sauce, garlic, salt, black pepper, and onion soup in a large bowl. Use your hands to mix until just combined.
Line the slow cooker with aluminum foil across the bottom and up the two sides. Shape the meat mixture into an oval shape and place it into the slow cooker.
Cover and cook on low for 6 hours or on high for 3 hours.
Thirty minutes before the final cooking time is done. Add ingredients for the glaze in a small bowl. Then top the meatloaf with the glaze, cover, and cook remaining 30 minutes.
Slice and serve while hot.
Notes
Don’t overmix the ingredients into the ground beef, or you will squeeze out the moisture and make the meatloaf tough and dry.
Place the meatloaf in the oven under the broiler for a few minutes after you apply the glaze to make it crispy and golden brown.
Use chicken or beef broth instead of milk to make the recipe dairy-free.
