Place chicken breast chunks in the bottom of a 6-quart slow cooker.
Add cream cheese, corn, pepper jack cheese, sour cream, salt, black pepper, garlic, tajin seasoning, and cilantro in a medium bowl. Mix until well combined and pour over the chicken.
Cover and cook on high for 2½-3½ hours or low for 5-6 hours.
