Ingredients
  

  • pounds Yukon gold potatoes cleaned, rinsed and cut into ¾" pieces
  • 1 pound ham Cubed
  • 1 medium yellow onion Diced
  • 2 large carrots Peeled and chopped
  • 3 ribs celery Chopped
  • 4 cups chicken broth
  • 3 teaspoons garlic Minced
  • ½ teaspoon dried thyme
  • 1 teaspoon paprika
  • teaspoons black pepper
  • ½ cup sour cream
  • 2 cups heavy cream
  • ¼ cup all-purpose flour
  • 1 cup cheddar cheese Shredded

Instructions
 

  • Add the potatoes, ham, onion, carrots, celery, chicken broth, garlic, thyme, paprika, and black pepper to a 6-quart slow cooker.
  • Cover and cook on low for 7-8 hours or high for 4-5 hours.
  • In a medium bowl, add heavy cream and flour. Whisk until well combined. Add flour slurry, sour cream, and cheddar cheese to the slow cooker. Stir and continue to cook for 15 minutes.
  • Serve while hot and enjoy!
