Slow Cooker Chicken Cordon Bleu

This Slow Cooker Chicken Cordon Bleu is the perfect easy dinner for picky eaters. Who doesn't love ham, cheese, and chicken? This is by far one of the simplest and tastiest crock pot chicken casseroles that I have ever made. It pleases even the pickiest eaters so I highly recommend you try it this week!

The chicken slowly cooks in the creamy soup and sour cream sauce with savory ham creating a flavor bomb. It has tasty Swiss cheese and tang from two types of mustard to balance the flavors. The stuffing adds another layer of flavor and texture.

Ingredients

Below is everything you need for stuffing the chicken breasts, the creamy sauce, and the stuffing topping. There aren't any unique ingredients in this recipe, so it's all super easy to find!

• Chicken breasts: I love chicken breasts over thighs for this recipe because they are easiest to stuff. You may still use chicken thighs if you prefer.
• Deli ham: Any variety and brand of deli ham is great in this recipe. Whether you choose boiled, smoked, or other type is entirely up to you.
• Swiss cheese: Classic cordon bleu uses Swiss cheese so that is what we went with here. Ensure you grab slices and not shredded because it's easier to stuff into the chicken.
• Sour cream: This adds tangy flavor and richness to the chicken cordon bleu. You may use full-fat or low-fat sour cream.
• Cream of chicken soup: I like the creamy texture and robust flavor of the cream of soups. They add lots of flavor to a dish without the need for extra salt.
• Chicken broth: To thin out the sour cream and soup, I add some chicken broth. Feel free to use low sodium if you want a less salty flavor.
• Mustard: I use two kinds of mustard in this recipe. Yellow for tang and dijon for depth and a hint of spice.
• Spices: I keep it simple and use only black pepper and onion powder. There's plenty of salt in this chicken cordon blue casserole.
• Garlic: Fresh garlic enhances the flavors of the chicken in this dish. It's one of my favorite ingredients to use.
• Dry stuffing: Don't follow the package directions for the stuffing. You will be making a special topping for the casserole with it.
• Butter: Melted butter is mixed with the stuffing for the topping. This adds moisture and helps it get some color as it cooks.

How to Make Chicken Cordon Blue in the Crock Pot

Here are the instructions on how to make this easy chicken cordon bleu casserole. I recommend that you spray your slow cooker before you get started to ensure that the chicken doesn't stick to the bottom.

Step 1: Slice and stuff the chicken. Make a slice on the side of each chicken breast, creating a pocket. Roll up two slices of ham and two slices of cheese and stuff them into the chicken breast. Repeat this process for the others and place them at the bottom of the slow cooker.

Step 2: Make the sauce. Combine the sour cream, soup, broth, mustard, spices, and garlic in a medium bowl. Whisk the ingredients until they are well combined. Then, pour it evenly over the chicken in the pot.

Step 3: Combine the stuffing and butter. Add the stuffing mix and melted butter to a separate bowl. Stir to combine and then spread it over the top of the sauce mixture.

Step 4: Cook. Cover and cook the crock pot cordon bleu for 3-4 hours on high or 4 ½ - 6 hours on low.

Storage Directions 

• Storing: Store leftovers in an airtight container for up to 3 days in the refrigerator. To freeze, place the cooled casserole into a freezer-safe container and store it for up to 3 months.
• Reheating: Reheat the leftovers in the microwave for 2-3 minutes or until hot.
• Make Ahead: You may prepare the components of the chicken cordon bleu and store them in the refrigerator for up to 24 hours before cooking it. Stuff the chicken breasts wrap them and put the sauce mixture into an airtight container. I recommend making the stuffing mixture at cooking time.
