    Slow Cooker Shredded Chicken Tacos

    These Slow Cooker Shredded Chicken Tacos are made with tender, slow-cooked chicken breast that is flavored with your favorite salsa and taco seasoning, along with diced green chiles for a taco filling that your whole family will enjoy.

    Chicken tacos are one of my favorite dinners, especially when the chicken is flavorful and shredded. These Slow Cooker Shredded Chicken Tacos are super simple to make (no cooking is required!) and you can flavor them with your favorite salsa and taco seasoning. I love how the salsa really soaks into the chicken, making it super tender and keeping it from drying out.

    This is one of the easiest dinners to make if you are in a hurry. All you have to do is put your chicken breasts, salsa, seasonings, and green chilies together in the slow cooker and let it cook all day. After it has cooked, the chicken will easily shred with two forks. When you are ready to enjoy it, just mix everything together and serve on tortillas with your favorite taco toppings.

    Ingredients For Your Slow Cooker Mexican Shredded Chicken

    • Boneless, Skinless Chicken Breasts.
    • Salsa
    • Taco Seasoning
    • Black Pepper
    • Diced Green Chilies

    How To Make Slow Cooker Chicken Tacos

    1. Place chicken breasts in the slow cooker. Cover with salsa and sprinkle taco seasoning, black pepper, and green chilies over the top.
    2. Cover and cook on low for 7-8 hour or on high for 2½-3 hours. When done cooking shred the chicken with two forks and stir into the sauce.
    3. Serve on tortillas with your favorite toppings.

    What to Serve/Pair with Your Crock Pot Chicken Taco Meat

    This chicken tastes best served on tortillas with your favorite taco toppings. You can also serve it on a taco salad - yum! I have even served it on nachos and even in quesadillas. For a side dish to go with your chicken tacos, serve a delicious mango salsa with plantain or tortilla chips. It also tastes great added onto the tacos! If you want something a little heartier, serve a layered bean dip, also with chips. It makes a great alternative to the usual refried beans.

    For dessert, follow these chicken tacos with a traditional key lime pie. The lime flavor will pair perfectly with the flavor from the chicken.

    Popular Substitutions & Additions

    • For some extra spice, you can either add in a few jalapenos or choose a spicy salsa.
    • If you prefer, you can make your own taco seasoning rather than using a store-bought packet.
    • If you want some extra tomatoes in the mix, you can use a can of Rotel with green chilies in place of the can of green chilies.

    How To Reheat & Store Slow Cooker Chicken Tacos

    This slow cooker chicken will last for up to 3 days in the fridge. Make sure that it is completely covered or sealed. You can also freeze this chicken! Once it has completely cooled, transfer the chicken into a sealed, freezer safe container. The chicken will last in the freezer for up to 6 weeks. Thaw it completely in the fridge before reheating. 

    To reheat leftover slow cooker chicken, divide it into individual servings, and microwave each serving for 2 minutes, or until warm (microwave times may vary). If you have a large batch to reheat, you can heat it in the slow cooker as directed above.

    Does it matter what kind of salsa that I use?

    Nope! For this slow cooker chicken, you can choose whichever flavor and brand of salsa is your favorite. You can even use homemade!

    How will I know that my chicken is done cooking?

    When your chicken is finished cooking, it will easily shred with a fork.

    Do I need to line or spray my slow cooker?

    Yes! I recommend doing this before cooking anything in a slow cooker. It makes cleanup much easier and keeps things from sticking in the corners.

      If I double this recipe, do I need to double the cook time?

        You should not need to double the cook time. I would check the chicken to make sure it reaches 165 degrees internally.
