How To Make Crock Pot Corned Beef and Cabbage
1: Add the onion to the bottom of the slow cooker.
2: Rub mustard all over the corned beef and place it on top of the onion.
3: Add the remaining ingredients.
4: Cook until the corned beef and vegetables are tender, adding the cabbage about 2 hours before the end of the specified cook time.
5: Slice and enjoy!

It's important to add the onions to the bottom of the slow cooker so they get nicely softened and release as much flavor as possible.
Storage
Refrigerate the corned beef and vegetables as soon as it's cool enough to do so to maximize its freshness and flavor.

Crock Pot Corned Beef and Cabbage
Ingredients
- 1 large yellow onion chopped
- 3 tbsp mustard
- 3-4 pounds corned beef brisket + spice packet
- 2 tsp garlic minced
- 2 bay leaves
- 1 pound baby red potatoes cut in half
- 3 large carrots chopped
- 2 cups low-sodium chicken broth
- 1 small head of cabbage cut into small wedges
Instructions
- Chop onion and place it in the bottom of a 6-quart slow cooker. Then, rub the mustard over the corned beef and place on top of the onions.
- Add spice packet, garlic, bay leaves, potatoes, and carrots. Then, pour in chicken broth.
- Cover and cook on low for 8-10 hours. Two hours before cook time is up add cabbage wedges. Cover and continue to cook.
- Slice brisket before serving and enjoy!
