    This crock pot corned beef and cabbage is a classic St. Patrick's Day dish made even easier than ever, thanks to the slow cooker. Tender corned beef, soft cabbage, and perfectly cooked potatoes and carrots come together to create a hearty, delicious dish perfect for the holiday or any time of year.

    When St. Patrick's Day rolls around, we're all suddenly Irish, and we're all suddenly craving corned beef and cabbage. I've taken the classic beef dish and made it super easy and delicious by cooking it in the slow cooker for perfect results every time.

    This dish was inspired by my other classic beef recipe on this site, and it pairs well with this sweet apple dessert for a classic, rustic meal.

    Corned beef and cabbage is a classic St. Patrick's Day meal that's actually a delicious addition to any dinner table year-round. There's a lot to love about this beefy dish any time of year.

    Ingredients

    • Yellow onion - chopped
    • Mustard
    • Corned beef brisket with spice packet
    • Garlic - minced
    • Bay leaves
    • Baby red potatoes - cut in half
    • Large carrots - chopped
    • Low-sodium chicken broth
    • Cabbage - cut into small wedges

    Flavor Variations and Substitutions

    • Mustard: Any kind of mustard will work in this recipe.
    • Chicken Broth: You can use beef broth if you prefer.
    • Spicy: Add a spicy twist with some red pepper flakes.

    How To Make Crock Pot Corned Beef and Cabbage

    1: Add the onion to the bottom of the slow cooker.

    2: Rub mustard all over the corned beef and place it on top of the onion.

    3: Add the remaining ingredients.

    4: Cook until the corned beef and vegetables are tender, adding the cabbage about 2 hours before the end of the specified cook time.

    5: Slice and enjoy!

    Hint

    It's important to add the onions to the bottom of the slow cooker so they get nicely softened and release as much flavor as possible.

    Storage

    Refrigerate the corned beef and vegetables as soon as it's cool enough to do so to maximize its freshness and flavor.

    To reheat, place the corned beef and vegetables in a saucepan with a splash of water or broth and cook over medium-low until heated through.

    Refrigerator: Store for up to 4 days in an air-tight container.

    Freezer: Store for up to 3 months in an air-tight, freezer-safe container. Defrost in the refrigerator overnight before reheating.

    What to Serve with Crock Pot Corned Beef and Cabbage

    This delicious corned beef recipe is a full meal on its own, but you can pair it with other sides to create a heartier meal with even more flavor.

    Tips

    • Add the cabbage wedges toward the end of cooking the corned beef so they don't get mushy.
    • Always add the onions to the bottom of the crock pot. This allows them to get nice and soft and release all of their flavor.
    • This is a recipe that should be cooked on low for the best results.

    FAQ

    Can I make this recipe in an Instant Pot instead of a slow cooker?

    Yes. Set the Instant Pot to the "Sauté" function to brown the corned beef with the mustard and spices first, then add the remaining ingredients except the cabbage and cook on high pressure for 90 minutes. Add the cabbage when finished, and use the "Sauté" function again for about 5 minutes until it's tender.

    Can I slow cook corned beef on HIGH?

    To make sure your corned beef is tender, cook it on a low setting in your slow cooker for the full recommended time of 8-10 hours. Cooking corned beef slowly on low heat allows the tough fibers in the brisket to break down properly, resulting in a more tender texture, which may not happen if it’s cooked on high. 

    Do I have to use the spice packet that comes with the corned beef?

    While you don’t need to use the spice packet that comes with the corned beef, doing so adds authentic flavor that complements the dish's overall flavor, making it stand out from other crock pot beef recipes.

    Ingredients
      

    • 1 large yellow onion chopped
    • 3 tbsp mustard
    • 3-4 pounds corned beef brisket + spice packet
    • 2 tsp garlic minced
    • 2 bay leaves
    • 1 pound baby red potatoes cut in half
    • 3 large carrots chopped
    • 2 cups low-sodium chicken broth
    • 1 small head of cabbage cut into small wedges

    Instructions
     

    • Chop onion and place it in the bottom of a 6-quart slow cooker. Then, rub the mustard over the corned beef and place on top of the onions.
    • Add spice packet, garlic, bay leaves, potatoes, and carrots. Then, pour in chicken broth.
    • Cover and cook on low for 8-10 hours. Two hours before cook time is up add cabbage wedges. Cover and continue to cook.
    • Slice brisket before serving and enjoy!
