- Deli ham: Any variety and brand of deli ham is great in this recipe. Whether you choose boiled, smoked, or other type is entirely up to you.
- Swiss cheese: Classic cordon bleu uses Swiss cheese so that is what we went with here. Ensure you grab slices and not shredded because it’s easier to stuff into the chicken.
- Sour cream: This adds tangy flavor and richness to the chicken cordon bleu. You may use full-fat or low-fat sour cream.
- Cream of chicken soup: I like the creamy texture and robust flavor of the cream of soups. They add lots of flavor to a dish without the need for extra salt.
- Chicken broth: To thin out the sour cream and soup, I add some chicken broth. Feel free to use low sodium if you want a less salty flavor.
- Mustard: I use two kinds of mustard in this recipe. Yellow for tang and dijon for depth and a hint of spice.
- Spices: I keep it simple and use only black pepper and onion powder. There’s plenty of salt in this chicken cordon blue casserole.

How to Make Chicken Cordon Blue in the Crock Pot
Here are the instructions on how to make this easy chicken cordon bleu casserole. I recommend that you spray your slow cooker before you get started to ensure that the chicken doesn’t stick to the bottom.
Step 1: Slice and stuff the chicken. Make a slice on the side of each chicken breast, creating a pocket. Roll up two slices of ham and two slices of cheese and stuff them into the chicken breast. Repeat this process for the others and place them at the bottom of the slow cooker.
Step 2: Make the sauce. Combine the sour cream, soup, broth, mustard, spices, and garlic in a medium bowl. Whisk the ingredients until they are well combined. Then, pour it evenly over the chicken in the pot.
Step 3: Combine the stuffing and butter. Add the stuffing mix and melted butter to a separate bowl. Stir to combine and then spread it over the top of the sauce mixture.
Step 4: Cook. Cover and cook the crock pot cordon bleu for 3-4 hours on high or 4 ½ - 6 hours on low.
HINT: Don’t leave the pot on warm.
Even when set to warm, the chicken will continue to cook. Avoid leaving it in the warm setting for too long so your chicken doesn’t dry out.

- Storing: Store leftovers in an airtight container for up to 3 days in the refrigerator. To freeze, place the cooled casserole into a freezer-safe container and store it for up to 3 months.
- Reheating: Reheat the leftovers in the microwave for 2-3 minutes or until hot.
- Make Ahead: You may prepare the components of the chicken cordon bleu and store them in the refrigerator for up to 24 hours before cooking it. Stuff the chicken breasts wrap them and put the sauce mixture into an airtight container. I recommend making the stuffing mixture at cooking time.
