    Ingredients

    • Flank Steak: This long, thin cut of beef is known for being flavorful, but chewy. Slow cooking the flank steak for fajitas lets the fat render making the meat becomes incredibly tender. You could also use a skirt steak, sirloin, or round cut of beef for this fajita steak recipe.
    • Yellow Onion: Add a little sweetness with thinly sliced yellow onions. The pungent flavor of these onions mellow as they cook. Red onions are also a great option for fajitas. 
    • Bell Peppers: Slice red, yellow, or orange bell peppers to add into your fajitas. Use one color, two, or all three to add a sweet flavor and some color to the dish. Be sure to include green bell peppers as well! They have a more zippy flavor than the other colors and are a must in fajitas.
    • Canned Diced Tomatoes with Chilies: A can of these flavorful tomatoes adds acidity and spice to the fajitas, just be sure to drain all of the excess juice before adding them to your slow cooker.
    • Chipotle Peppers in Adobo Sauce: These peppers add an earthy, smoky, and spicy flavor to any Mexican-inspired dish. You only need a little bit to pack a punch!
    • Garlic: Fresh garlic adds a zesty, aromatic flavor to the fajitas. Mince the garlic yourself or buy a jar of preminced garlic at the grocery store.
    • Lime Juice: Fresh lime juice adds brightness and acidity to this dish. The acidity helps tenderize the steak and meld the flavors together.
    • Seasonings: Create a fajita seasoning using chili powder, cumin, paprika, oregano, salt, and pepper, or use a packet of fajita seasoning.

    Variations

    • Use Chicken Instead: If you don’t eat red meat, or simply aren’t in the mood for steak fajitas, try chicken fajitas instead. Use boneless skinless chicken breasts or thighs to avoid any bones. Slow cooker chicken fajitas only need to cook for 3.5-4 hours, rather than 6-8 hours.
    • Sweeten the Sauce: If you want to balance the spicy and savory flavors with a little sweetness, add a bit of honey or agave nectar to the crock pot. 
    • Add More Veggies: Create a well-balanced meal right in the crock pot and add more vegetables! Mushrooms, carrots, and cauliflower are great options because they take longer to cook and won't get mushy in the slow cooker. You could also add a can of beans or corn. 
    • Spice It Up: While the chipotle peppers in adobo sauce and chilies add a little spice, you can make these crock pot steak fajitas a little spicier with fresh or pickled jalapenos.

    How to Make Slow Cooker Steak Fajitas

    You’ll never feel intimidated by fajitas again after you try these crock pot flank steak fajitas! They are so simple, require hardly any prep work, and are delicious.

    1. Step 1: Add the Onions and Peppers. Slice your onions and peppers and add them to the bottom of a 6-quart slow cooker.

    1. Step 2: Place in Slow Cooker. Place the flank steak on top of the vegetables and season with chili powder, cumin, paprika, salt, oregano and black pepper.

    1. Step 3: Top with Tomatoes. Add the drained tomatoes and chilies, adobo chipotle peppers, garlic, and lime juice to the slow cooker.

    1. Step 4: Let It Cook. Secure the lid and set to low. Let the flank steak fajitas cook for 6-8 hours.

    1. Step 5: Slice and Serve. Once cooked, remove the flank steak from the crock pot and let it rest on a cutting board for a few minutes. Then slice it into thin, less than 1 inch, strips against the grain of the meat. Mix the cut meat back into the sauce, then serve using a slotted spoon.

    Expert Tips

    • Let It Rest: Resting time is a very important step in cooking flank steak. It gives the meat time to finish cooking and redistribute juices through the meat and it allows the muscle fibers of the meat to relax. The result is a more tender and juicy steak.
    • Go Against the Grain: Since flank steak is a more tough and chewy piece of meat, it’s important to cut it against the grain. “The grain” is the visible muscle fibers in the meat, so you want to cut perpendicular to those fibers. This makes the cut steak easier to chew. This is also an important step if you use skirt steak as it’s a similar cut of meat.
    • Slice Thin: Another key part to cutting flank steak is to cut it into thin pieces. The slices of meat for these crock pot flank steak fajitas should be less than an inch thick so they are easy to chew.

    Storage Directions

    • Storing: Store any crock pot steak fajitas in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to 3 months in a freezer-safe container. Include a little bit of the juice when storing to keep the meat from drying out and getting tough.
    • Reheating: Reheat these steak fajitas in a skillet on the stove with the juice over medium heat for 20 minutes, or until heated through. You can also heat them in the microwave under a damp paper towel for 30 second increments until heated through.
    • Make Ahead: Make these fajitas in the crock pot and store them in the freezer for an easy freezer meal during busy weeks. Just be sure to slice the meat before you store them because a whole flank steak will take forever to defrost and reheat!

    My family loves this fajita steak recipe for dinner during the week, but it’s also great for serving a crowd. Mix up your usual weekend family cookout with steak fajitas and all of the fixings instead. Your family will love how flavorful they are and that you weren’t standing over a hot stove all day.

    • Create a build-your-own buffet with flour or corn tortillas, tortilla chips, sour cream, shredded cheese, lettuce, beans, avocado, and crock pot white queso dip. Then let everyone choose their own toppings and make their perfect fajita tacos or nachos.
    • Try serving these crock pot steak fajitas over slow cooker white rice or brown rice, and a garnish of finely chopped fresh cilantro and sour cream on top.
    • Serve fajitas as the main dish with a side of pinto beans, cheesy Rotel dip, or a fun Mexican street corn dip.

    Ingredients
      

    • 1 yellow onion sliced
    • 1 red bell pepper sliced
    • 1 yellow bell pepper sliced
    • 1 green bell pepper sliced
    • 1 ½ pounds flank steak
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • ½ teaspoon salt
    • ½ teaspoon oregano
    • 1 teaspoon black pepper
    • 10.5 ounces diced tomatoes with green chillies drained
    • ¼ cup chipotle peppers in adobo sauce chopped (Optional, leave out if you don't like it spicy)
    • 3 teaspoons garlic minced
    • 2 limes juiced

    Instructions
     

    • Add onions and bell peppers to the bottom of a 6-quart slow cooker.
    • Place the flank steak on the vegetables and season with chili powder, cumin, paprika, salt, oregano and black pepper.
    • Top with diced tomatoes with green chillies, chipotle peppers in adobo sauce, garlic, and lime juice.
    • Cover and cook on low for 7-8 hours or high for 3-4 hours.
    • Remove the steak and slice against the grain. Add it back into the slow cooker and mix into juices and veggies.
    • Serve on tortillas with your favorite toppings and enjoy!

    Notes

    • Give the flank steak time to rest for a few minutes after cooking for a more tender and juicy steak. Resting allows the juices to evenly redistribute through the meat and gives the muscle fibers of the meat time to relax.
    • Slice the meat perpendicularly across the visible muscle fibers, also known as “the grain” to make the flank steak strips less chewy.
    • Slice the flank steak into thin strips that are less than an inch thick so they are easier to chew.
