If you have never made a Ribeye Steak in a Crock Pot, this is your sign to change that! This is one of my all-time favorite steak recipes. Ribeye is a wonderful cut with just the right amount of fat marbled through the meat to make it tender and flavorful.

This recipe is a great start to a comforting and filling meal. Beef and mushrooms are a classic combo, and the gravy is thick and bursting with mushroom flavor, which perfectly complements the ribeye. Slow cooking everything in a crock pot also infuses the delicious flavors of the seasonings and steak into the gravy.

Ingredients
Below are all of the items needed to make a delectable sauce to cook your steak in the slow cooker. They’re mostly common and inexpensive ingredients that you will be able to find easily at any grocery store.
- Ribeye steaks: I use thick-cut ribeye steaks for this recipe so they don’t overcook in the slow cooker. If you decide to use thinner cuts, you may have to adjust the cooking time.
- Seasonings: I chose salt, pepper, and dried thyme to rub onto the steaks before searing them for a simple seasoning blend that doesn’t overpower the other flavors.
- Olive oil: You can choose any oil you like to sear the steaks. My go-to is olive oil, but canola oil is another good choice.
- Onion: These will be sliced for this recipe. They cook down and soften well, and I like to have pieces of onion in the sauce.
- Mushrooms: The mushrooms will also be sliced. I love large pieces with bites of steak.
- Garlic: One of my favorite ingredients is garlic because it enhances the flavors of other ingredients, while also providing a sharp flavor and appetizing aroma as it cooks.
- Onion soup mix: This is my shortcut for adding lots of flavor to the gravy mixture.
- Beef broth: I use beef broth as the base for the sauce because it goes well with the steak. Vegetable broth will also work here.
- Ketchup: I like to add some ketchup for a little sweetness and tomato flavor.
- Worcestershire sauce: Its umami flavor is the perfect complement to the fresh mushrooms.
- Cornstarch: I add cornstarch to thicken the gravy to the perfect consistency.

Variations
- Cajun: Use a Cajun blend and rub on the steaks for some heat.
- Lemon and herb: Try this slow cooker steak with fresh herbs like parsley, basil, and oregano. Pair with lemon juice and zest for zing!
- Mississippi style: Add ranch seasoning and use pepperoncini peppers instead of mushrooms for a traditional Mississippi version.
- Gluten-free: Use a gluten-free dry onion soup mix, gluten-free beef broth and gluten-free Worcestershire sauce. The rest of the ingredients are already naturally gluten-free.
How to Cook Ribeye Steak in the Crock Pot
Here are all of the steps you need to slow-cook steak perfectly in your crock pot. It’s an incredibly easy process with minimal work involved.
Step 1: Season the steaks. Generously season both sides of each steak with salt, pepper, and dried thyme.
Step 2: Sear them. Heat a large skillet over medium-high heat. Then, add the olive oil. Sear each side of the steaks for about 1 minute or just to get some color.
Step 3: Add steak and veggies to the pot. Place the ribeyes into the bottom of the crock pot. Next, place the sliced onions and mushrooms on top of the steaks.
Step 4: Make the sauce mixture. Combine the garlic, soup mix, beef broth, ketchup, Worcestershire sauce, and cornstarch in a medium mixing bowl. Whisk the ingredients until they are well combined. Pour the mixture over the top of the steaks and veggies.
Step 5: Cook. Cover the crock pot and cook the steaks for 6-7 hours on low or 2-3 hours on high.
Hint: Make a slurry.
If you find that the gravy mixture is too thin for your preference, combine 1 tbsp of cornstarch and 1 tbsp of water, and mix it into the slow cooker to thicken it.
Storage Directions
- Refrigeration: Store leftovers in the refrigerator for up to 3 days in an airtight container.
- Reheating: Place the leftover steak and sauce on a microwave-safe plate. Heat for 1-2 minutes or until warmed through.
- Freezing: Ensure the steak and sauce are cooled completely, put them into a freezer-safe container, and freeze for up to 3 months. I recommend thawing the steak in the refrigerator overnight before reheating.
- Make Ahead: Sear the steak and add the ingredients to the slow cooker. Store it covered in the refrigerator for up to 24 hours before you are ready to cook it.

- Try a meat thermometer: I like to use a meat thermometer to ensure that the steaks are cooked to the temperature I prefer.
- Don’t overcook the meat: If you cook the steaks too long, they will start to fall apart and be difficult to slice.
Recipe FAQs
You can, but I don’t recommend it. Not only does searing add a nice crust and extra flavor to the steak, but it also helps to lock in the juices as it cooks. This will keep the meat super tender when you slice into it later!
This recipe works with either cut. Bone-in offers more flavor and takes a little longer to cook.
If there is a lot of excess fat on the steaks you have, yes. I like to render it a bit when I sear the steaks, so it’s melt-in-your-mouth tender.
