This crock pot breakfast casserole comes together in just a few minutes using a store-bought tube of cinnamon rolls and chopped apples, eggs, and heavy cream. All you'll need to do is set it and forget it!

    This delicious breakfast can be served alongside some fresh fruit and a hot cup of coffee for the perfect fall morning, or it can be served as part of a decadent brunch for a holiday or slow Sunday morning.

    Prepare the apples: Peel the green apples and remove the core. Chop into small squares, then spread them on top of the cut cinnamon rolls in a single even layer. Top with the remaining cinnamon rolls.

    Whisk the liquid mixture: In a medium-sized mixing bowl, add the heavy cream, eggs, vanilla, and spices. Whisk together to fully combine, then pour over the apple and cinnamon mixture.

    Slow cook the cinnamon rolls: Cover and cook on high for 3 to 4 hours.Ice and enjoy: Once the cinnamon roll casserole is cooked through, warm the icing in the microwave for 30 seconds, then drizzle on top of the cinnamon rolls. Serve hot, and enjoy!

    Ingredients
      

    • 3 cans grand cinnamon rolls (Quartered)
    • 2 cups peeled granny smith apples (cubed into ½-inch pieces)
    • 4 eggs
    • 1½ cup heavy cream
    • 2 tsp vanilla extract
    • 1½ tsp cinnamon
    • ¼ tsp nutmeg
    • 2 reserved icing (saved from cinnamon rolls)

    Instructions
     

    • Add half of the quartered cinnamon rolls to the bottom of the slow cooker.
    • Pour the apples onto the cinnamon rolls and spread evenly. Then top with the remaining cinnamon rolls.
    • Add eggs, heavy cream, vanilla extract, cinnamon, and nutmeg to a medium bowl. Whisk together and evenly pour over the top of the cinnamon rolls.
    • Cover and cook on high for 3 to 4 hours.
    • Heat reserved icing for 30 seconds in the microwave and pour over the cinnamon rolls.
    • Serve while hot and enjoy!
