    Crockpot Tortellini Soup with Sausage

    Whip up this tasty Crockpot Tortellini Soup with Sausage in a snap using a slow cooker. Packed with Italian Sausage, onion, garlic, and spices in a creamy broth, it's loaded with tomatoes, cheesy tortellini, parmesan, and fresh spinach for an easy and delicious meal.

    I love a good soup for dinner any time of year but add in the fact that this soup is cooked in the slow cooker, and it’s a winner in my book. This tasty tortellini soup combines so many different ingredients, but somehow, they blend together perfectly and give you an amazing, flavorful dinner. This hearty soup will fill you up but will also have you going back for seconds (and thirds).

    This tortellini soup recipe is simple to mix up in the morning, and when you get home, there are only a few simple, quick steps to take before it’s ready to eat. In the morning, you’ll need to cook your sausage with the onion and spices, then combine it with the first few ingredients in the slow cooker. Before you are ready to enjoy your soup, you just have to add the tortellini, parmesan, spinach, and cream and let it cook a little longer. Your house will smell so good that the hardest part will be waiting for it to be ready!

    Ingredients You’ll Need

    • Olive Oil
    • Mild Italian Sausage
    • Onion
    • Chicken Broth
    • Diced Tomatoes
    • Tomato Paste
    • Salt & Black Pepper
    • Thyme & Italian Seasoning
    • Cornstarch
    • Frozen Tortellini
    • Parmesan Cheese
    • Baby Spinach
    • Heavy Cream

    How To Make Crockpot Tortellini Soup

    1. Add olive oil and Italian sausage in a large skillet over medium heat. Cook for 4-5 minutes until completely browned. Then add onion and garlic and cook for an additional 4-5 minutes.
    2. Drain excess grease and add to the slow cooker.
    3. Add chicken broth, diced tomatoes, tomato paste, black pepper, salt, thyme, Italian seasoning, and cornstarch. Mix everything together until well combined.
    4. Cook on low for 8 hours or on high for 4 hours.
    5. Thirty minutes before the cooking time is done. Add in the tortellini, Parmesan cheese, spinach, and heavy cream. Mix everything together until well combined.
    6. Serve while hot and garnish with fresh grated Parmesan cheese.

    What to Serve With

    Because this soup is so hearty, it makes a great dinner on its own. If you want to dip something in your soup, try these Bread Sticks.

    If you want a salad with your soup, one of my favorites is this Strawberry Spinach Salad. It’s refreshing and delicious. For a sweet treat after your soup, try these Chocolate Chip Cookies. They are thick, soft, and taste like red velvet cake in cookie form.

    Popular Substitutions & Additions

    If you want to add a little extra spice to this crockpot tomato tortellini soup, use spicy Italian sausage instead of mild. You can also add a dash of cayenne or some red pepper flakes.

    Three Cheese Tortellini is my favorite for this recipe, but you can use any flavor of tortellini. I’m sure that spinach and cheese tortellini would be delicious!

    How To Reheat & Store

    Crockpot Tortellini Soup will last for up to 3 days in the fridge.  Once it has completely cooled, transfer it into a sealed container before placing it in the fridge. To reheat, you can put it back into the crockpot until it is warm or microwave individual portions for 1-2 minutes each.

    I don't recommend freezing this Crockpot creamy tortellini soup. The creamy broth tends to separate once it is frozen. But If you do, let it cool and pour it into an air-tight, freezer-safe container. When you are ready to eat it, thaw it completely in the fridge, then reheat it in the crockpot on low for 6-8 hours or on high for 3-5 hours.

    FAQs

    Can I use fresh tortellini instead of frozen?

    Sure. Fresh tortellini tends to come in smaller packages, so make sure you have enough.

    Can I make this soup low sodium?

    Yes, you can! I know that the high sodium content of most soups is a drawback for some people. To lower the sodium content in this one, use a low-sodium chicken broth. You can also use low-sodium seasoning, such as Mrs. Dash, instead of salt.

    Can I use fresh tomatoes instead of canned tomatoes?

    For this recipe, you’ll want to use canned tomatoes. They tend to be more flavorful in crockpot recipes than fresh tomatoes.

    Can I use kale instead of spinach?

    Sure! If kale is your preference, feel free to switch them out.

    • 1 tbsp olive oil
    • 1 lb mild Italian sausage
    • 1¼ cups yellow onion
    • 3 tsp garlic (minced)
    • 6 cups chicken broth
    • 2 (14 oz) cans diced tomatoes
    • 1 (6 oz) can tomato paste
    • 1 tsp black pepper
    • ½ tsp salt
    • ½ tsp thyme
    • 1 tsp Italian seasoning
    • 1 tbsp corn starch
    • 1 lb small frozen 3 cheese tortellini
    • ½ cup Parmesan cheese (finely shredded)
    • 4 cups fresh baby spinach
    • 1½ cup heavy cream

        I made this last night and it was absolutely outstanding!!       This soup came out amazing!!! I did not use chopped onions, I used dried minced onion and 1 can of petite tomatoes instead of 2 cans. My family loved it! My fellow employees loved it and asked for the recipe! I will be making this several times! Thank you for posting this recipe!

      We don’t eat a lot of tortellini, so when I grabbed it at the store I wasn’t sure what I’d do with it. Found your recipe and gave it a try last night. Wow! All five members of my family loved this recipe; I’ll definitely make it again! There were hardly any leftovers, which is always a good sign that I’ve found a recipe that’s a keeper. I ended up making it on the stove and used regular size spinach and it was delicious! Thanks so much!

      This is soooooo delicious. Wondering what your recommendation would be to make it a little healthier for a weeknight meal? Less cream or is there a healthier alternative? Also a meat suggestion besides sausage since sausage is often fatty.

      I loved this recipe it was delicious. I was tired and didn’t want to slow cook it so I followed the directions but put in the ingredients in the Instapot for 30 minutes on high pressure. Afterwards I added the rest of the ingredients and let it slow cook on high for another hour while I ran an errand.

      This is my all time favorite soup!!! It has been a huge hit at social events. I switch out the diced tomatoes for diced carrots. I just sauté them up before adding them in and they add so much to the dish. Either way, I could eat this soup every day!!!

      I’ve made this soup twice now. It is by far our favorite soup. It’s even better the second day. We’re staying in a rental house right now with no crockpot, so I made it on the stove. Also, I used dry tortellini. Same results. Delicious!

      I absolutely love this soup. I have made it four times in the last month. The recipe is easy to follow, and the result spectacular. The soup has a tomato base, but is complemented with the spinach , sausage ( I prefer hot) and tortellini. A must try for the winter months.
