This easy crock pot meatloaf will change how you make meatloaf forever. This recipe calls for your slow cooker to be lined with aluminum foil along the bottom and sides, so there is even less clean up!
- Step 1: Prepare the Loaf. Combine the ground beef, Ritz crackers, eggs, ketchup, mustard, milk, Worcestershire sauce, garlic, onion soup packet, salt, and pepper in a large bowl. Use your hands to mix the ingredients until combined. Do not pack the meat tightly together or overwork it.
- Step 2: Shape the Meat. Shape your meat mixture into an oval loaf and place it in your aluminum foil-lined slow cooker. Cover and cook on low for 6 hours or on high for 3 hours.
- Step 3: Add the Glaze. About 30 minutes before the meatloaf is done, mix up your glaze using ketchup, mustard, and brown sugar. Pour the glaze over the meat, then recover it and cook for the remaining 30 minutes.

The Glaze
- ⅔ cup Ketchup
- 2 tbsp brown sugar
- 1 tbsp yellow mustard
Instructions
- Add ground beef, Ritz crackers, eggs, ketchup, mustard, milk, Worcestershire sauce, garlic, salt, black pepper, and onion soup in a large bowl. Use your hands to mix until just combined.
- Line the slow cooker with aluminum foil across the bottom and up the two sides. Shape the meat mixture into an oval shape and place it into the slow cooker.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Thirty minutes before the final cooking time is done. Add ingredients for the glaze in a small bowl. Then top the meatloaf with the glaze, cover, and cook remaining 30 minutes.
- Slice and serve while hot.

- Don’t overmix the ingredients into the ground beef, or you will squeeze out the moisture and make the meatloaf tough and dry.

Can you line the crockpot with a crockpot liner or does it need to be foil

I recommend foil so you can transfer it to a baking sheet and broil it for 3-5 minutes. Using liners makes it hard to transfer them to a baking sheet. Also, liners tend not to be broiler friendly.
